Sixty second courgetti for little tummies, with BabyLed Spreads

The second in my BabyLed Spread meal series is a quick one. I’ve had to squeeze lunch in today between a group this morning, a recovery nap after a bad night and a certificate presentation with the Lord & Lady Mayoress this evening. Baby Button has a more active social life than I do!

The answer to a busy day?

Cheesy Courgetti

Ingredients:

• one courgette, spiralized
• one teaspoon of Philadelphia Cheese or Greek yoghurt
• one teaspoon of Ricotta & Bean BabyLed Spread

It’s that simple. I told you it was going to be a quickie, didn’t I?

I spiralized my courgette this morning, using my beloved Kilner Spiralizer Jar. Baby Button was having his breakfast and I knew I needed to plan our meals today carefully to prevent any last minute disasters that might happen, so I got on with it while he tucked into his pancakes and apricot.

This afternoon I quickly mixed the yoghurt and Ricotta & Bean Spread before adding it to the Courgetti.

Something as simple as this dish really did go down well with Baby Button. As I’ve already mentioned before, he’s an incredibly tactile and sensory young man and any food he can chase around his tray is a win win. Yes, we had to forgo the Bamboo Bamboo Fox Plate as he’s begun pulling the plate off of his tray and promptly hitting himself in the head with it. Not ideal!
