I recently got back into the kitchen – having moved house and acquiring a better oven. Nothing felt better than busting out my baking gear and giving some BLW (Baby Led Weaning) recipes a go!
Today I’m sharing the Blueberry & Banana Muffins that went down so well with Baby Button last week. I didn’t follow a recipe for these, but I do spend many hours on Pinterest soaking up ideas and inspiration for meal ideas – and following other people on the weaning journey via Instagram is just as helpful. Both sources have kept me on my best game when it comes to dinners!
• 340g self raising flour
• 30g porridge oats, and a handful for sprinkling onto the muffins as they go into the oven
• 1 egg, whisked well
• 125ml milk
• a mashed banana
• three tablespoons of Greek yoghurt
• 125g of blueberries
Preheat the oven to 180C
I had Baby Button in his high chair eating that days dinner as I prepared these, and I literally added all the wet ingredients to the dry ones and stirred.
Once the mixture was mixed well and the consistency was something like a cake batter but much lumpier. I then divided the mixture into twelve silicone muffin cases and popped them in the oven. They took fifteen minutes to cook, I double checked they had cooked inside by popping a knife in the biggest muffin and checking if the blade came out clean.
These were amazing for some independence while weaning – I served mine with some Greek yoghurt on the side and we had some dipping action going on, which was great. Obviously, these are bland and sweetened only with the fruit so they’re perfect for little bellies and tastebuds without being boring!
